Chef Nikolay Kuropatkin is responsible for non-trivial gastronomic transformations at Birukka. Moreover, the menu embodies culinary secrets of one of the most progressive and renowned chefs in Russia and concurrently the restaurant's friend - Andrey Zhdanov.
Non-sweet eclairs with crab and different caviar, salmon tartare with avocado and apple-taiga sauce, sterlet and pikeperch soup, rice with crab, courgette and citrus dew, marbled bull meatballs with crispy cabbage and truffle - the gastro offer includes several dozens of European dishes with an emphasis on local and seasonal products. Everything is cooked in the open kitchen, so every guest can watch the process.
Moscow team headed by Ilya Doronin and Artem Larionov-Obraztsov worked on the bar menu. An absolute must-drink at Birukka is trendy conceptual cocktails, which are invented by Kirill Simonov, an experienced bar manager and experimenter: ‘Flight of the Bee’, ‘Crimson Forest’, ‘Fallen Leaf’, ‘Taro Sauer’ - each mix has a cultural and historical subtext.
